Sitting over Asian vegetable ravioli in a tomato-ginger consomme

With chickpea hummus, and white bean artichoke dip, finished with roasted red pepper oil

 The Winter Salad
Consisiting of frisee, arugula, and radicchio lettuces, tossed with blood orange sections, roasted bar nuts, cauliflower, and green lentils, dressed with an olive oil-citrus vinaigrette

 

Fish

 Smoked White Fish Salad
Resting on a warm potato latke, with julienne of pickled winter vegetables

Crispy, pan-fried skatewing, resting on kitchen-made parsley spaghetti, tossed with flavored bread crumbs, capers, parsley, lemon zest, and Pecorino Romano cheese

Slow-Roasted Leg of Fresh Ham
Sliced over jasmine and wild rice, tossed with dried apricots and pine nuts, and French fried asparagus spears, drizzled with lemon and "natural juices"
